Method

In una ciotola, tritare finemente l'aglio e il prezzemolo. Aggiungere il tacchino macinato, la ricotta, l'uovo intero, il pangrattato integrale, sale e pepe. Amalgamare delicatamente con le mani fino a ottenere un composto omogeneo e compatto.

Inumidire le mani con acqua fredda e formare 12 polpettine della dimensione di una noce. Trasferirle su un piatto.

Portare il brodo a ebollizione in una pentola ampia. Aggiungere le polpettine con delicatezza e cuocere a fuoco medio per 12-15 minuti, finché non risalgono in superficie e rimangono salde.

Con un mestolo forato, trasferire le polpettine in un piatto e tenerle in caldo. Filtrare il brodo in una pentola pulita.

Aggiungere il riso integrale al brodo e cuocere secondo i tempi indicati sulla confezione (circa 18-20 minuti) fino a cottura al dente.

In una ciotola piccola, mescolare lo yogurt greco con i due tuorli d'uovo e il succo di limone fresco, mescolando bene.

Terminata la cottura del riso, abbassare il fuoco al minimo, versare il composto di yogurt e uova direttamente nel brodo, mescolando continuamente con un cucchiaio di legno per 2-3 minuti. Non far bollire.

Aggiungere l'olio extravergine d'oliva e le polpettine nella pentola, mescolare delicatamente.

Trasferire in una zuppiera calda e servire subito, con una grattugia di scorza di limone fresca se desiderato.
