Preriscalda il forno a 180°C. Prepara 6 cocottine in ceramica o stampi in alluminio, asciutti e leggermente untati con un filo d'olio.

Pela finemente la cipolla e tritala in pezzetti piccoli. In un tegame, riscalda l'olio a fuoco medio e fai appassire la cipolla per circa 3-4 minuti, finché non diventa trasparente e fragrante.

Nel frattempo, sbuccia le fave fresche (se molto grandi, togli anche la pellicola verde interna) e trasferiscile in una ciotola.

In un'altra ciotola, versa la ricotta, gli albumi, l'uovo intero, il Parmigiano grattugiato, sale, pepe e noce moscata. Mescola energicamente con una forchetta finché il composto non diventa omogeneo e cremoso.

Incorpora le fave nella crema di ricotta e uova, poi aggiungi la cipolla intiepidita con il suo olio. Mescola delicatamente fino a distribuire bene tutti gli ingredienti.

Riempi le cocottine per i tre quarti con il composto preparato, distribuendolo in modo uniforme.

Cuoci in forno a 180°C per 25-28 minuti, finché il composto non si gonfia leggermente e la superficie diventa dorata e lievemente screpolata.

Tira fuori dal forno con attenzione (i bordi saranno caldi), lascia intiepidire per 2-3 minuti e servi subito.
