Sbucciare e tagliare a pezzi le pere, e grattugiare finemente la radice di zenzero.

Mettere in un pentolino le pere, lo zenzero, il succo di limone e l'estratto di vaniglia.

Aggiungere l'eritritolo e mescolare bene gli ingredienti.

Cuocere a fuoco medio per circa 30 minuti, mescolando di tanto in tanto finché le pere non si ammorbidiscono e rilasciano il loro succo.

Una volta cotta, frullare la composta con un frullatore ad immersione fino a ottenere una consistenza liscia o lasciarla a pezzi, a seconda delle preferenze.
