Method

In una ciotola, unire la farina di avena, l'eritritolo, il burro di cocco fuso, l'uovo e un pizzico di sale. Mescolare fino ad ottenere un impasto omogeneo.

Avvolgere l'impasto in pellicola trasparente e mettere in frigorifero per 15 minuti.

Preriscaldare il forno a 180°C. Stendere l'impasto tra due fogli di carta forno fino a uno spessore di circa 5mm e ritagliare dei biscotti a forma di coniglio.

Cuocere in forno per 10-12 minuti fino a leggera doratura.

Nel frattempo, sciogliere il cioccolato fondente a bagnomaria.

Mescolare il cioccolato fuso con lo yogurt greco fino a ottenere una crema liscia.

Una volta raffreddati i biscotti, farcirli con un po' di ganache e sovrapporre il secondo biscotto.

Decorare la superficie con la ganache rimanente e lasciare riposare in frigorifero per 10 minuti.
