Scaldare il latte scremato a fuoco basso senza farlo bollire, poi versarlo in una ciotola assieme allo yogurt greco e mescolare bene.

Aggiungere le uova intere e montarle leggermente nel composto, creando una base omogenea.

Setacciare le proteine in polvere al gusto vanilla e il cacao magro direttamente nel composto, mescolando con una frusta fino a eliminare i grumi.

Aggiungere il miele e mescolare ancora, creando una crema liscia e densa.

Frantumare i biscotti integrali con le mani dentro un sacchetto per controllare la granulometria: pezzi non troppo fini.

Distribuire il fondo di biscotti sbriciolati in 8 coppette (circa 10-12 g per coppetta).

Ricoprire con un primo strato di crema proteica (circa 40 g per coppetta).

Aggiungere un secondo strato di biscotti sbriciolati e concludere con un secondo strato di crema.

Coprire con pellicola trasparente e riporre in frigorifero per almeno 2 ore.

Poco prima di servire, sciogliere il cioccolato dark con l'olio di cocco a bagnomaria e decorare il top di ogni coppa con sottili righe di cioccolato.
