Method

Asciugare bene il petto di pollo e scaldare in padella antiaderente con 5 ml di olio EVO a fuoco medio-alto per 4-5 minuti per lato fino a doratura; aggiungere aglio tritato e erbe italiane.

Unire i funghi portobello (tagliati a strisce) e la cipolla dolce, coprire e cuocere a fuoco medio per 12 minuti fino a ammorbidimento.

Scolare i succhi di cottura in un pentolino, trasferire il pollo e verdure in una piccola pirofila.

Nel pentolino con i succhi aggiungere 30 ml di vino bianco, portare a bollore per 1 minuto, quindi versare 80 ml di yogurt greco 0%, 15 g di Gruyere grattugiato e mescolare fino a fusione; eventualmente addensare con 2 g di amido di mais diluito in acqua fredda.

Versare la salsa sul pollo e infornare a 175°C per 10 minuti fino a che il pollo raggiunge 74°C al termometro.

Servire caldo con la salsa e le verdure.
