Preriscalda il forno a 150°C. Fodera uno stampo a cerniera da 20 cm con carta forno sul fondo e sui lati. Avvolgi la base dello stampo in carta stagnola per evitare infiltrazioni d'acqua. Posiziona lo stampo su una teglia da forno.

In una ciotola grande, unisci ricotta, formaggi cremosi light e olio. Riscalda a bagnomaria a temperatura bassa (circa 45-50°C) mescolando dolcemente per 3-4 minuti fino a ottenere una crema omogenea.

Togli la ciotola dal bagnomaria e aggiungi 40 g di zucchero di canna, mescolando bene. Incorpora il latte scremato poco alla volta, mescolando con una frusta.

Aggiungi il tuorlo e il succo di limone, amalgamando fino a una consistenza liscia.

Cospargil'amido di mais sul composto e mescola delicatamente con una spatola fino a eliminare ogni grumo.

In una ciotola separate, munita di fruste pulite, monta gli albumi con il cremor tartaro a velocità media per circa 3-4 minuti. Quando iniziano a montare, aggiungi gradualmente i restanti 20 g di zucchero di canna e il miele, continuando a montare fino a ottenere picchi morbidi e lucidi (non secchi).

Incorpora gli albumi montati al composto di ricotta in tre aggiunte, mescolando delicatamente con una spatola da pasticceria con movimenti dal basso verso l'alto, fino a ottenere una massa soffice e omogenea. Non smontare l'impasto: il movimento deve essere molto gentile.

Trasferisci il composto nello stampo preparato, livellando leggermente la superficie.

Versa acqua bollente nella teglia fino a raggiungere circa 2-3 cm di altezza attorno allo stampo (bagnomaria).

Cuoci in forno a 150°C per 55-65 minuti. La cheesecake è pronta quando il centro ha una leggera ondulazione (non deve essere completamente sodo), ma i bordi sono ben cuotti.

Spegni il forno, socchiudi leggermente lo sportello e lascia la cheesecake dentro per altri 10-15 minuti per un raffreddamento graduale.

Estrai la teglia dal forno, togli la cheesecake dal bagnomaria e lasciala raffreddare completamente a temperatura ambiente (circa 30 minuti).

Trasferisci in frigorifero per almeno 4 ore prima di sformare.

Sforma delicatamente, fai scivolare su un piatto e cospargila leggermente con zucchero a velo. Servi fredda.
