Scaldare 5 ml di olio EVO in una pentola antiaderente. Rosolare a fiamma media 120 g di petto di pollo tagliato a bocconi per 4-5 minuti. Salare e condire con mezzo cucchiaino di ras el hanout e un pizzico di cumino. Togliere il pollo e metterlo da parte.

Nella stessa pentola, rosolare 40 g di cipolla affettata sottile per 2 minuti fino a imbiondirla leggermente. Aggiungere 80 g di carota e 80 g di zucchina tagliate a dadini piccoli, cuocere 3 minuti mescolando.

Aggiungere 60 g di melanzana a dadini, 40 g di pomodori pelati (da scatola), 1 spicchio d'aglio tritato finemente e il pollo. Versare 150 ml di acqua, portare a ebollizione e lasciare sobbollire coperto per 20 minuti a fuoco medio-basso.

Dopo 15 minuti di cottura, aggiungere 40 g di ceci secchi reidratati (o 50 g in scatola sgocciolati). Continuare la cottura fino a quando le verdure sono tenere.

Nel frattempo, versare 60 g di semola in una ciotola e versarvi 90 ml di acqua tiepida salata. Coprire e lasciare gonfiare per 5 minuti.

Sgranare la semola con una forchetta, aggiungere 3 g di olio EVO e mescolare delicatamente. Servire il couscous in piatto fondo, versarvi sopra il brodo con carni e verdure.
