Preriscalda il forno a 160°C e rivesti una teglia (20x30 cm) con carta forno.

In una ciotola, monta gli albumi con il sale fino a ottenere una schiuma leggera e stabile (circa 2-3 minuti con le fruste elettriche).

Aggiungi dolcemente la stevia liquida, l'estratto di caffè solubile sciolto in 1 cucchiaio d'acqua tiepida, la cannella e la polvere proteica, mescolando delicatamente dall'alto verso il basso per non smontare gli albumi.

Incorpora i semi di zucca, le mandorle tritare finemente, i semi di girasole, i semi di sesamo e l'olio di cocco fuso, amalgamando con movimenti dolci.

Versa il composto sulla teglia preparata e distribuiscilo in modo uniforme con un spatola bagnata, cercando di creare uno strato compatto e regolare.
