Riscalda una padella antiaderente a fuoco medio-basso con l'olio extravergine di oliva per 1 minuto.

In una ciotola, sbatti leggermente le uova con il brodo vegetale, il sale, il pepe e la paprica fino a ottenere un composto omogeneo ma non montato.
