Versare il latte scremato in un pentolino a fuoco medio. Aggiungere lo zucchero, il sale e i semi di vaniglia grattati dal baccello (o la vanillina).

In una ciotola a parte, mescolare le proteine in polvere con l'amido di mais, quindi aggiungere i tuorli e mescolare bene fino a ottenere un composto liscio e omogeneo.

Quando il latte inizia a scaldarsi (circa 60°C), versare lentamente il composto di tuorli e proteine dentro il pentolino, mescolando costantemente con una frusta per evitare grumi.

Continuare a cuocere per 6-8 minuti, sempre mescolando, finché la crema non si addensa e raggiunge i 75-80°C. La crema deve risultare densa e cremosa.

Trasferire la crema in una ciotola, coprire con pellicola a contatto e lasciare raffreddare completamente a temperatura ambiente, quindi riporre in frigorifero per almeno 1 ora.

In una ciotola fredda, montare la panna leggera a velocità media fino a quando raggiunge la consistenza di panna montata (circa 3-4 minuti). Aggiungere il dolcificante stevia se desiderato.

Riprendere la crema pasticcera fredda dal frigorifero e incorporare delicatamente la panna montata con una spatola, facendo movimenti dal basso verso l'alto, fino a ottenere un composto uniforme e aerato.

Servire immediatamente in coppette o utilizzare come farcitura per dolci.
