In una pentola a fondo pesante, versare il latte e scaldarla a fuoco medio-basso fino a raggiungere i 70-75°C, mescolando frequentemente.

In una ciotola, sbattere i tuorli con lo zucchero fino a ottenere un composto pallido e cremoso (circa 3 minuti).

Aggiungere l'amido di mais ai tuorli e mescolare bene per eliminare grumi.
