Method

Accendi il forno a 150°C e prepara una teglia con acqua per la cottura a bagnomaria.

In una ciotola, sbatti i tuorli d'uovo con l'eritritolo e l'estratto di vaniglia fino a ottenere un composto omogeneo.

Scalda il latte scremato in un pentolino a fuoco basso senza farlo bollire.

Versa lentamente il latte caldo nel composto di tuorli, mescolando bene per evitare di cuocere le uova.

Aggiungi lo yogurt greco e mescola fino ad amalgamare il tutto.

Versa il composto in ramekins e sistemali nella teglia con acqua calda.

Cuoci in forno per circa 30 minuti, finché i bordi non si rassodano ma il centro rimane leggermente tremolante.

Lascia raffreddare a temperatura ambiente e poi metti in frigorifero per almeno 1 ora.

Prima di servire, spolvera la superficie con lo zucchero di cocco e utilizza un cannello per caramellare lo zucchero fino a ottenere una crosticina dorata.
