Sciacqua e asciuga bene i ceci lessati, scartando la pellicina esterna dove possibile per una texture più liscia.

Versa i ceci in un frullatore insieme alle uova intere, al latte di mandorla, all'olio extravergine di oliva, al sale, alla curcuma e al pepe nero.

Frulla fino a ottenere un composto omogeneo e fluido; se troppo denso, aggiungi piccoli sorsi di acqua tiepida fino a raggiungere la consistenza di una pastella leggera (simile a quella per i pancake).

Lascia riposare la pastella 10 minuti a temperatura ambiente: i ceci continueranno ad assorbire leggermente il liquido.

Scalda una padella antiaderente da 20 cm di diametro a fuoco medio; distribuisci una piccola quantità di olio di cocco e stendi uniformemente con un foglio di carta assorbente.

Versa un mestolo di pastella al centro della padella calda e inclina subito in tutti i sensi affinché si stenda uniformemente fino ai bordi.

Cuoci per 2-3 minuti finché il bordo inizia a staccarsi e la superficie appare leggermente asciutta; capovolgi con cautela e cuoci il lato opposto per altri 1-2 minuti fino a una leggera doratura.

Trasferisci la crêpe su un piatto e ripeti con il restante impasto.

Servi caldo, farcito a scelta con ricotta magra e miele, frutti di bosco freschi, burro di arachidi naturale, o semplicemente con uno yogurt greco.
