Lavora i gamberoni col coltello per ridurli in pezzi piccoli, quindi tritali finemente con un coltello da cucina o un robot da cucina: devono formare un impasto grossolano.

In una ciotola, unisci il gamberone tritato, il pangrattato integrale, l'uovo intero, il latte scremato, il parmigiano, l'aglio, il prezzemolo, sale e pepe: mescola energicamente fino a ottenere un composto omogeneo e compatto.

Riponi l'impasto in frigorifero per almeno 30 minuti: questo facilita la formazione delle polpette e migliora la coesione.

Preriscalda il forno a 200°C.

Con le mani umide, forma polpette di circa 40 g ciascuna (circa 12-16 polpette) e disponile su una teglia rivestita di carta da forno, distanziate di qualche centimetro.
