Riscalda il forno a 200°C.

In una padella antiaderente piccola, scalda mezzo cucchiaio di olio a fuoco medio e sfuma la cipolla tritata per 3-4 minuti fino a renderla trasparente e dolce.

In una ciotola, unisci il tonno scolato, la ricotta magra, il parmigiano, la noce moscata, sale e pepe; mescola energicamente con una forchetta fino a ottenere un composto omogeneo e cremoso.

Aggiungi la cipolla cotta al composto e amalgama bene. Se l'impasto risultasse troppo secco, aggiungi mezzo cucchiaio d'acqua.

Metti il pangrattato integrale in un piattino e l'albume in un altro piattino poco profondo.

Forma 12 crocchette lunghe con le mani leggermente umide, premendo bene l'impasto; prima passale nel pangrattato, poi nell'albume, infine di nuovo nel pangrattato.

Disponi le crocchette su una teglia rivestita di carta forno, distanziate di 2 cm l'una dall'altra.

Spruzza leggermente le crocchette con uno spray d'olio oppure pennella con mezzo cucchiaio d'olio.

Inforna per 12-15 minuti fino a quando risultano dorate e croccanti.

Estrai dal forno e lascia raffreddare per 2-3 minuti su carta assorbente prima di servire.
