Grattugia il formaggio Gruviera light e mettilo in una ciotola da parte.

In un pentolino, riscalda il latte scremato a fuoco medio, aggiungendo la farina di riso setacciata poco alla volta, mescolando costantemente per evitare grumi.

Continua a mescolare per 4-5 minuti fino a ottenere una besciamella densa e cremosa; aggiungi noce moscata grattugiata, sale e pepe.

Preriscalda il forno a 200°C.

Disponi 4 fette di pane integrale su una teglia rivestita di carta forno.

Stendi metà della besciamella su ogni fetta, distribuisci il prosciutto crudo (circa 30 g per sandwich), aggiungi il formaggio grattugiato e ricopri con la besciamella restante.

Chiudi con le altre 4 fette di pane, spennella leggermente il burro chiarificato fuso sulla superficie e cospargvi il restante formaggio.

Cuoci in forno per 12-14 minuti, finché il formaggio si dorerà leggermente.

Nel frattempo, spruzza olio in padella antiaderente a fuoco medio-alto e cuoci le uova all'occhio di bue (circa 3-4 minuti), salando e pepando a piacere.
