Method

Preparare la base: in una ciotola mescolare farina integrale, farina di mandorle, sale e un pizzico di vaniglia. Aggiungere l'uovo, il burro ammorbidito e il miele, lavorare fino a ottenere un impasto compatto. Avvolgere con pellicola e refrigerare 30 minuti.

Stendere l'impasto tra due fogli di carta forno fino a uno spessore di 4-5 mm. Trasferire in una tortiera da 22 cm di diametro rivestita di carta forno.

Praticare buchi sulla base con i rebbi di una forchetta e raffreddare 15 minuti in frigorifero.

Cuocere a 180°C per 30-35 minuti fino a doratura leggera. Lasciare raffreddare completamente.

Preparare il ripieno: ammorbidire la gelatina in acqua fredda (se agar-agar, mescolare a 2 cucchiai di acqua tiepida).

In una ciotola mescolare yogurt greco con miele, latte di mandorle e succo di limone. Incorporare la gelatina sciolta (o agar-agar diluito), mescolare bene fino a omogeneo.

Affettare una banana sottilmente, distribuire metà della crema sulla base fredda, disporre le fettine di banana, coprire con il resto della crema.

Refrigerare almeno 2 ore. Prima di servire, tagliare a fette sottili e decorare con una banana affettata fresca e una spolverata di cannella.
