Preriscaldare il forno a 160°C. Preparare una teglia per 12 muffin con pirottini di carta.

In una ciotola, mescolare gli albumi con eritritolo e zesta di limone fino a ottenere una miscela uniforme.

In un'altra ciotola, setacciare insieme la farina di mandorle, farina integrale, lievito e sale.

Incorporare delicatamente i dry ingredients agli albumi montati, alternando con il latte scremato, mescolando dal basso verso l'alto.

Distribuire il composto nei pirottini fino ai ¾ e cuocere per 28 minuti a 160°C, fino a doratura leggermente rosa al centro.
