Preparare l'impasto: mescolare farina di mandorle, proteine in polvere, eritritolo, uovo, yogurt greco e sale fino a ottenere un impasto omogeneo e lavorabile.

Formare una pallina di 40g, sistemarla su carta forno, creare un'infossatura al centro.

Posizionare mezza pesca fresca al centro, pressare delicatamente.

Con il restante impasto formare sottili strisce a gabbia sulla pesca.

Cuocere in forno preriscaldato a 180°C per 12 minuti fino a doratura leggera.
