Method

In una ciotola, mescola la farina di mandorle, la farina integrale e il sale. Aggiungi il burro light ammorbidito e lavora con le mani fino a ottenere un composto sabbioso.

Unisci lo yogurt greco e un uovo, mescolando fino a formare un impasto omogeneo. Se necessario, aggiungi un po' d'acqua per facilitare la lavorazione.

Preriscalda il forno a 180°C e rivesti una teglia con carta da forno.

Stendi l'impasto in due strisce lunghe circa 35 cm e larghe 8 cm sulla teglia.

In un pentolino, porta a ebollizione 80 ml d'acqua con l'estratto di mandorla e l'eritritolo. Togli dal fuoco e aggiungi lentamente il composto di farina, mescolando fino a ottenere una pasta liscia.

Trasferisci la pasta sulle strisce d'impasto nella teglia, distribuendola uniformemente.

Cuoci in forno per circa 30 minuti, fino a doratura. Lascia raffreddare.

Per la glassa, mescola 50 g di eritritolo con un cucchiaio d'acqua e un pizzico di estratto di mandorla fino a ottenere una consistenza fluida. Versa sopra il dolce raffreddato.
