Method

Inizia idratando il foglio di gelatina in acqua fredda per 10 minuti.

In un pentolino, scalda il latte scremato a fuoco basso e sciogli la gelatina strizzata al suo interno, mescolando bene.

Togli dal fuoco e unisci la ricotta, lo yogurt greco e l'eritritolo, mescolando fino ad ottenere un composto omogeneo.

Trasferisci il composto in sei stampini monoporzione e riponi in frigorifero per almeno 2 ore.

Nel frattempo, prepara la base di biscotto: in una ciotola, unisci la farina di mandorle, il burro di cocco fuso, l'uovo e l'estratto di vaniglia, mescolando fino ad ottenere un impasto compatto.

Preriscalda il forno a 175°C e foderare una teglia con carta forno.

Stendi l'impasto tra due fogli di carta forno fino a uno spessore di circa 5 mm e ritaglia dei dischi con un coppapasta.

Disponi i dischi sulla teglia e cuoci in forno per 15-18 minuti, fino a doratura.
