Prepara il pan di spagna: monta 2 albumi con 1 cucchiaio di eritritolo fino a picchi fermi. Amalgama delicatamente 1 tuorlo, 15g farina di mandorle, 5g farina d'avena e 1 goccia di vaniglia; piega gli albumi in 2 tempi.

Dividi l'impasto: in metà aggiungi 1 cucchiaino di cacao in polvere non zuccherato. Versa il bianco in uno stampo monoporzione (8x8cm) rivestito di carta forno, sovrapponi il cacao.

Cospargi 6 cilegie sgocciolate e inforna a 160°C per 14 minuti; raffredda.

Per il custard: sciogli 5g maizena con 50ml latte scremato, riscalda il restante latte, versa il composto e cuoci 2 minuti mescolando; togli dal fuoco e aggiungi 2 cucchiai yogurt greco 0%, 1/2 cucchiaino vaniglia e eritritolo a piacere. Stendi sul pan di sponga raffreddato.

Glassa: fai fondere 15g cioccolato fondente 85% a bagnomaria, aggiungi 1 cucchiaino olio EVO; versa sulla crema e crea onde con una forchetta.

Refrigera almeno 1 ora prima di servire.
