Sciacqua i gamberi sotto acqua fredda e asciugali con un panno. Tritali grossolanamente e mettili in una ciotola.

Aggiungi l'uovo, lo scalogno, l'olio di sesamo, l'amido di mais, la salsa di soia, l'aglio, il sale e il pepe. Mescola bene fino a ottenere un composto omogeneo.

Prepara una pentola a vapore e porta l'acqua a ebollizione. Cuoci le polpette di gamberi al vapore per circa 8 minuti, fino a quando diventano opache.
