1. Inizia preparando la crema: scalda il latte di mandorle in un pentolino, quindi aggiungi la maizena e l'eritritolo, mescolando bene. Cuoci a fuoco medio fino a ottenere una consistenza densa.2. Tempera il tuorlo d'uovo con un po' di crema calda e reincorpora nel pentolino. Cuoci per un altro minuto e poi trasferisci in una ciotola. Copri e lascia raffreddare.3. Prepara l'impasto per la sfoglia: in un pentolino, fai sciogliere il burro con un pizzico di sale e il latte di mandorle. Una volta che bolle, togli dal fuoco e aggiungi la farina di mandorle. Mescola bene.4. Aggiungi l'uovo e le proteine in polvere al composto e mescola fino ad ottenere una pasta omogenea.5. Trasferisci l'impasto in una sac à poche e forma dei bastoncini di circa 10 cm su una teglia rivestita di carta forno.6. Cuoci in forno preriscaldato a 200°C per 20 minuti, poi abbassa la temperatura a 160°C e cuoci per altri 5 minuti fino a doratura.7. Una volta raffreddati, mescola lo yogurt greco con il caffè e la crema raffreddata. Riempi gli éclair con questa crema.8. Per la glassa, fai sciogliere il cioccolato fondente con un po' di latte di mandorle finché non diventa lucido.9. Immergi la parte superiore degli éclair nella glassa e decora con le lamelle di mandorle.
