Method

In un pentolino, scalda il latte di mandorla e aggiungi l'amido di mais e l'eritritolo; cuoci a fuoco medio mescolando fino a ispessire (circa 2 minuti).

Togli dal fuoco e tempera il tuorlo d'uovo con una parte della crema calda, quindi reincorpora il tuorlo nella crema e cuoci per un altro minuto. Trasferisci in una ciotola, copri e lascia raffreddare per 20 minuti.

In un altro pentolino, porta a ebollizione 60ml d'acqua, il burro di cocco e un pizzico di sale. Togli dal fuoco, aggiungi la farina integrale e mescola bene.

Aggiungi l'uovo intero e le proteine in polvere, mescola fino ad ottenere un composto omogeneo.

Trasferisci il composto in una sac a poche e forma dei bastoncini di circa 10cm su una teglia coperta di carta forno.

Cuoci in forno preriscaldato a 200°C per 15 minuti, poi riduci la temperatura a 160°C e continua la cottura per altri 10 minuti fino a doratura.

Una volta fredda, mescola lo yogurt greco con la crema raffreddata e aggiungi le fragole a pezzetti.

Per la glassa, sciogli 30g di cioccolato fondente con un cucchiaio di latte di mandorla a fuoco lento, mescolando fino a ottenere una consistenza liscia.

Assembla l'éclair tagliandolo a metà, riempi con la crema di fragole, richiudi e immergi la parte superiore nella glassa al cioccolato. Decorare con fragole fresche a piacere.
