Method

In una ciotola, unire lo yogurt greco, la farina di mandorle, l'uovo, l'eritritolo e il sale, mescolando fino ad ottenere un composto omogeneo.

Trasferire il composto in una tasca da pasticceria e formare un bastoncino di circa 10 cm su una teglia rivestita di carta da forno.

Cuocere in forno preriscaldato a 200°C per circa 15 minuti, fino a leggera doratura. Lasciare raffreddare.

Nel frattempo, scaldare il latte di mandorla in un pentolino e sciogliervi il caffè solubile. Versare il mix caldo sul cioccolato fondente tritato e mescolare fino a ottenere una crema liscia.

Riempire l'éclair raffreddato con la crema al cioccolato-caffé e spolverare con cacao amaro.
