Method

In un pentolino, porta a ebollizione l'acqua con il burro light, il sale e l'eritritolo.

Una volta che il burro è completamente sciolto, togli dal fuoco e aggiungi la farina di avena, mescolando rapidamente con un cucchiaio di legno fino a formare un impasto omogeneo.

Lascia raffreddare leggermente l’impasto, poi incorpora le uova una alla volta, mescolando bene dopo ogni aggiunta.

Aggiungi infine le proteine in polvere e mescola fino ad ottenere un composto liscio.

Preriscalda il forno a 200°C e prepara una teglia rivestita di carta da forno.

Trasferisci l'impasto in una sac à poche con una bocchetta liscia e forma dei bastoncini di circa 10 cm sulla teglia, distanziandoli.

Cuoci per 20-25 minuti, fino a quando sono dorati e gonfi.

Una volta cotti, spegni il forno e lascia gli éclair all'interno con lo sportello socchiuso per 10 minuti.

Per la crema, monta la panna vegetale e aggiungi il caffè espresso e il cacao amaro, mescolando fino a ottenere una crema liscia.

Con un coltellino, pratica dei buchi alla base di ciascun éclair e riempili con la crema al caffè e cacao usando una sac à poche.
