In un pentolino, porta a ebollizione 50 ml d'acqua con 10 g di burro chiarificato, 3 g di sale e 2 g di eritritolo.

Aggiungi 30 g di farina di avena e mescola energicamente fino a ottenere un impasto omogeneo. Lascia intiepidire per 10 minuti.

Incorpora 1 uovo intero all'impasto e mescola fino a che non è ben amalgamato.

Trasferisci l'impasto in una sac a piping e forma un bastoncino di 12 cm su un foglio di carta forno.

Cuoci in forno preriscaldato a 200°C per 25 minuti fino a doratura. Poi spegni il forno e lascia socchiuso per 10 minuti.

Nel frattempo, prepara la crema: in una ciotola, mescola 150 g di yogurt greco, 15 g di cacao amaro, 1 tuorlo, estratto di vaniglia e 2 g di eritritolo.

Trasferisci la crema in un pentolino e cuoci a bagnomaria a fuoco basso per 5 minuti, mescolando continuamente fino a ottenere una consistenza cremosa.

Lascia raffreddare la crema e, una volta che l'éclair è freddo, riempi con la crema utilizzando la sac a piping.
