Method

Scaldare 100 ml di yogurt greco a bagnomaria fino a 85°C, poi aggiungere 20 g di cioccolato bianco tritato e 1 g di gelatina precedentemente ammollata, mescolando fino a completo scioglimento. Far raffreddare a temperatura ambiente per circa 20 minuti.

In una casseruola, mescolare 10 g di eritritolo, un pizzico di sale e 100 ml di acqua, portando a ebollizione. Togliere dal fuoco e aggiungere 50 g di farina di avena, mescolando energicamente fino a ottenere un composto liscio.

Lasciare intiepidire l'impasto per 10 minuti, poi incorporare un uovo grande, mescolando fino a ottenere un composto omogeneo.

Trasferire l'impasto in una sac à poche e formare due bastoncini di circa 9 cm su una teglia rivestita di carta forno. Cuocere in forno preriscaldato a 190°C per 12-14 minuti, fino a doratura leggera.

Una volta raffreddati, farcire gli éclair con la ganache di yogurt e cioccolato, decorare con 50 g di fragole fresche a pezzi e un pizzico di cioccolato bianco grattugiato.
