Preriscalda il forno a 200°C e rivesti una teglia con carta da forno.

In un pentolino, porta a ebollizione l'acqua con il burro chiarificato e il sale. Quando il burro è completamente sciolto, aggiungi la farina di avena e mescola energicamente fino a formare un impasto compatto che si stacca dai bordi. Togli dal fuoco.

Lascia intiepidire per qualche minuto, poi aggiungi le uova una alla volta, mescolando bene dopo ciascuna aggiunta fino a ottenere un composto liscio e omogeneo.

Con l’aiuto di una sac à poche, forma delle strisce di impasto sulla teglia, della lunghezza di circa 10 cm.

Cuoci i bignè in forno per 25-30 minuti, finché non risultano dorati e gonfi. Fai raffreddare su una griglia.

Nel frattempo, prepara la crema: in una ciotola, mescola lo yogurt greco con il cacao, il dolcificante e l'estratto di vaniglia fino a ottenere una crema liscia.

Una volta raffreddati, taglia la parte superiore dei bignè e farciscili con la crema al cacao.

Per la glassa, sciogli il cioccolato fondente a bagnomaria e ricopri gli eclair con il cioccolato fuso. Lascia solidificare prima di servire.
