Method

In una pentola, portare a ebollizione acqua salata e cuocere i tomatillos e il jalapeno per circa 10 minuti, finché non saranno teneri. Scolare e far raffreddare.

Frullare i tomatillos, il jalapeno, l'aglio, il coriandolo, un pizzico di sale e pepe fino a ottenere una salsa liscia.

In una padella, scaldare l'olio e rosolare la cipolla finché non diventa trasparente. Aggiungere il pollo sfilacciato, il cumino e un po' di brodo, mescolando bene.

Preriscaldare il forno a 190°C.

Distribuire un po' di salsa verde sul fondo di una teglia da forno.

Farcire ogni tortilla con un cucchiaio di ripieno di pollo e un po' di formaggio, poi arrotolarle e disporle nella teglia.

Coprire le enchiladas con la salsa verde rimanente e il formaggio rimanente.

Cuocere in forno per circa 25 minuti, finché il formaggio è fuso e le enchiladas sono calde. Servire con coriandolo fresco e a piacere.
