Method

In una padella, scaldare un cucchiaio d'olio e far soffriggere la cipolla tritata fino a doratura.

Aggiungere gli spinaci e cuocere fino a quando si saranno appassiti, quindi lasciar raffreddare.

In una ciotola, mescolare la ricotta, le uova, il parmigiano, sale e pepe. Unire gli spinaci raffreddati e amalgamare il tutto.

In un'altra ciotola, versare la farina e un pizzico di sale. Aggiungere acqua tiepida poco alla volta fino a ottenere un impasto morbido e omogeneo.

Dividere l'impasto in due parti e stenderle su un piano infarinato, una leggermente più grande dell'altra.

Rivestire una teglia con carta forno e adagiare la sfoglia più grande, rialzando i bordi.

Versare il ripieno di spinaci e ricotta sulla base e coprire con la sfoglia più piccola, sigillando bene i bordi.

Praticare dei fori sulla superficie con una forchetta per permettere al vapore di uscire.

Cuocere in forno preriscaldato a 180°C per circa 30 minuti, finché la superficie non sarà dorata.

Lasciare intiepidire, tagliare a fette e servire.
