Method

Preriscaldare il forno a 180°C e foderare la placca con carta forno.

Preparare la pasta frolla integrale: mescolare farina, burro freddo a dadini, uovo e zucchero di canna fino a ottenere un impasto omogeneo; lavorare rapidamente senza scaldare.

Stendere la pasta tra due fogli di carta forno a spessore di 3mm e ricavare con coppapasta: 8 dischetti da 5cm, 8 da 4cm e 16 da 3cm.

Disporre su placca e cuocere 12-14 minuti a 180°C fino a doratura leggera; raffreddare completamente.

Sciogliere a bagnomaria il cioccolato fondente 85%, togliere dal fuoco e aggiungere lo yogurt greco e il miele, mescolando fino a crema liscia e densa; far raffreddare 30 minuti.

Montare l'albume a neve morbida e incorporarlo delicatamente alla crema al cioccolato per leggerezza.

Assemblare i fantasmini: spalmare crema sul disco più grande, sovrapporre quello medio, spalmare ancora crema, infine i due dischetti piccoli sovrapposti; mettere in frigorifero 45 minuti.

Sciogliere il marshmallow proteico a bagnomaria con un cucchiaio d'acqua fino a consistenza di glassa; coprire ogni fantasmino con una sfoglia sottile.

Disegnare occhi e bocca con colorante nero alimentare o fondente nero; servire freddo.
