Method

Scalda il latte in un pentolino fino a renderlo tiepido, poi togli dal fuoco e lascialo raffreddare ulteriormente.

In una ciotola grande, mescola l'acqua tiepida con il lievito e l'eritritolo; lascia riposare per circa 5 minuti fino a formare una schiuma.

Aggiungi il latte tiepido, le uova, il sale e il cardamomo al composto di lievito e mescola bene.

Incorpora la farina integrale e le proteine in polvere, poi impasta fino a ottenere un composto liscio ed elastico.

Aggiungi l'olio di cocco fuso e continua a impastare fino a che non è ben amalgamato.

Trasferisci l'impasto su un piano di lavoro infarinato, copri con un canovaccio e lascia lievitare in un luogo caldo per circa 30-40 minuti, o fino a raddoppio.

Una volta lievitato, riprendi l'impasto, dividilo in 3 pezzi uguali e forma dei filoni.

Intreccia i filoni per formare una treccia e sistemala su una teglia rivestita di carta forno.

Copri nuovamente con un canovaccio e lascia lievitare per altri 20 minuti.

Preriscalda il forno a 180°C.

Spennella la treccia con un uovo sbattuto diluito con un po' d'acqua e, se desideri, cospargi con un pizzico di eritritolo.

Cuoci in forno per 25-30 minuti, finché non è dorata. Controlla che non bruci sul fondo.
