Preparare la salsa: tritare finemente 60g di mango fresco, 50g di avocado, 80g di pomodoro. Aggiungere 15g di cipolla rossa, prezzemolo fresco, succo di limone, un pizzico di peperoncino e sale. Omettere lo zucchero di canna.

Stagionare 150g di filetto di mahi-mahi con paprica, pepe nero e sale.

Cuocere il pesce in forno a 180°C per 12 minuti con 1 cucchiaio di olio EVO, finché la carne si sfoglia facilmente.

Riscaldare a 160°C per 3 minuti le 2 gallette di mais proteiche.

Assemblare i taco: distribuire il pesce nelle gallette, aggiungere la salsa di mango fresca e completare con una cucchiaiata di yogurt greco 0%.
