Preparare la salsa verde: grigliare i tomatillos e il peperoncino jalapeño su una piastra calda per 3-4 minuti fino a doratura. Trasferire in un frullatore con l'aglio, il succo di lime, sale e pepe; frullare fino a ottenere una consistenza omogenea.

Marinare il merluzzo: in una ciotola, unire il filetto di merluzzo con un cucchiaino di olio d'oliva, sale, pepe e metà della salsa verde. Lasciar marinare in frigorifero per 15 minuti.

Cuocere il merluzzo: scaldare una padella antiaderente a fuoco medio e cuocere il merluzzo per 8-10 minuti, girandolo a metà cottura, fino a quando non è completamente cotto.
