Method

Sciogliere il lievito in acqua tiepida per 5 minuti. In una ciotola grande, mescolare le farine e il sale.

Versare l'acqua con lievito nella farina e impastare per 8-10 minuti fino a ottenere un impasto omogeneo e leggermente appiccicaticcio.

Trasferire su piano leggermente infarinato, compattare e ripiegare su se stesso 4-5 volte. Porre in ciotola pulita, coprire con pellicola e far lievitare 45 minuti a temperatura ambiente.

Dividere l'impasto in 2 porzioni uguali. Stendere la prima porzione su una teglia rettangolare (25x35 cm) leggermente unta con 5 ml di olio, creando uno strato di circa 6 mm.

Distribuire metà dei pomodori freschi, metà della cipolla, metà dei pomodori secchi e metà della ricotta salata sulla base.

Stendere la seconda porzione di impasto e adagiarla sopra, sigillando bene i bordi con le dita.

Coprire con pellicola e far lievitare 35 minuti.

Nel frattempo preriscaldare il forno a 220°C.

Disporre i pomodori freschi rimasti sulla superficie, cospargere con cipolla residua, pomodori secchi e ricotta salata. Irrorare con i 20 ml di olio rimasti, condire con origano e pepe.

Infornare per 28-32 minuti fino a doratura della superficie.

Sfornare, lasciare raffreddare 5 minuti e tagliare in 6 porzioni uguali.
