Sciogliere il lievito in 280 ml di acqua tiepida con un pizzico di zucchero e lasciare riposare 10 minuti.

In una ciotola unire farina integrale, farina di segale e sale. Versare il lievito attivato e 10 ml di olio, impastare fino a ottenere un composto omogeneo e morbido.

Stendere l'impasto in una teglia rivestita di carta forno bagnata (30×20 cm), formare leggeri buchi con le dita e coprire; far lievitare 25 minuti a temperatura ambiente.

Nel frattempo, preparare l'hummus: frullare i ceci cotti con aglio, succo di limone, 25 ml di acqua, semi di sesamo e paprika fino a cremosità. Aggiustare di sale.

Tagliare tutte le verdure a bastoncini o striscioline sottili. Disporle su una teglia, spruzzare con olio spray, sale e pepe; grigliare in forno a 200°C per 10 minuti, mescolando a metà cottura.

Preriscaldare il forno a 200°C. Spalmare uniformemente l'hummus sulla focaccia lievitata.

Disporre le verdure grigliate sulla superficie seguendo un ordine cromatico (rosso, arancione, giallo, verde, viola), cospargere con pepe nero fresco.

Cuocere in forno a 200°C per 20-22 minuti fino a doratura dei bordi.

Sfornare, far intiepidire leggermente e servire tagliata in 4 porzioni.
