Method

In una ciotola capiente, unisci la farina integrale, le proteine in polvere, il lievito e il sale. Mescola bene gli ingredienti secchi.

Aggiungi l'acqua tiepida e l'olio extravergine d'oliva. Mescola fino a ottenere un impasto omogeneo.

Trasferisci l'impasto su una superficie infarinata e impasta per circa 5-7 minuti, fino a quando diventa liscio ed elastico.

Forma una palla con l'impasto e mettila in una ciotola leggermente unta. Copri con un panno umido e lascia lievitare in un luogo caldo per circa 30 minuti, o fino al raddoppio del volume.

Dopo la lievitazione, riprendi l'impasto e sgonfialo delicatamente. Dividilo in due parti e forma due filoni.

Posiziona i filoni su una teglia rivestita di carta da forno. Spennella la superficie con un po' d'acqua e cospargili con semi di sesamo.

Copri i filoni con un panno e lascia lievitare per altri 20 minuti.

Preriscalda il forno a 200°C. Prima di infornare, pratica dei tagli diagonali sulla superficie dei filoni.

Cuoci in forno per 25-30 minuti, fino a quando il pane risulta dorato e suona vuoto se picchiettato sul fondo.
