Lavare il cavolo nero, rimuovere i gambi e tagliare le foglie in pezzi medi. Cuocere al vapore per 12-15 minuti fino a quando risulta tenero ma non disfatto. Scolare accuratamente e far raffreddare leggermente.

In una ciotola capiente, versare le 3 uova intere e i 2 albumi, sbattere energicamente fino a ottenere un composto omogeneo e spumoso.

Aggiungere il Parmigiano Reggiano grattugiato, la farina integrale, il lievito, il sale e il pepe. Mescolare delicatamente con una spatola.

Incorporare il cavolo nero cotto e raffreddato, mescolando fino a distribuirlo uniformemente nell'impasto.

Preparare una teglia rivestita di carta forno, spruzzarla leggermente con olio di oliva in spray.
