Preriscaldare il forno a 180°C e foderare la placca con carta forno.

In una ciotola, mescolare il burro ammorbidito con stevia (o eritritolo) e semi di vaniglia fino a ottenere una crema pallida e spumosa (circa 2-3 minuti con una frusta elettrica).

Incorporare l'uovo intero, mescolando bene finché non si combina perfettamente.

In un altro recipiente, setacciare insieme farina di mandorle, farina di riso integrale, proteine whey, sale e lievito per dolci.

Aggiungere gli ingredienti secchi alla crema di burro, mescolando con cura fino a formare un impasto omogeneo e modellabile.

Trasferire l'impasto in una tasca da pasticceria con bocchetta a stella o dentellata.
