Preparare la base: mescolare 30g di farina d'avena, 1 albume, 10g di eritritolo e 1 pizzico di sale. Stendere su carta forno formando un disco sottile di 15cm. Cuocere in forno a 180°C per 10-12 minuti fino a doratura. Raffreddare completamente.

Preparare la crema: mescolare 60g di yogurt greco 0%, 40g di cream cheese ammorbidito e 1g di vanillina fino a consistenza omogenea. Spalmare sulla base raffreddata.

Disporre le fragole: affettare 80g di fragole fresche e arrangiare in cerchio sulla crema.

Preparare la glassa leggera: in un pentolino versare 40ml di succo d'arancia, 5ml di succo di limone, 2g di maizena, 1g di eritritolo e un pizzico di sale. Cuocere a fuoco medio per 1-2 minuti fino a leggera addensazione. Aggiungere la scorza di mezzo arancia grattugiata. Raffreddare leggermente.

Versare la glassa sulle fragole. Mettere in frigo per 30 minuti prima di servire.
