Taglia il burro in cubetti e mettilo in un pentolino a fondo spesso. Accendi il fuoco medio e lascia scaldare lentamente per circa 10-12 minuti, senza mai superare i 120°C (il burro non deve bollire vigorosamente, solo sciogliersi).

Osserva la separazione naturale: il burro puro sale verso la superficie, l'acqua e gli insoluibili latticini scendono sul fondo.

Spegni il fuoco e lascia riposare 3-4 minuti, affinché le particelle più pesanti si depositino completamente.

Posiziona una garza sterile a trama fitta sopra una ciotola pulita e asciutta. Versa il burro filtrato lentamente, lasciando sul fondo i residui latticini.

Se desideri una purificazione ancora maggiore, ripeti la filtrazione con una garza fresca.

Trasferisci il ghee filtrato e ancora tiepido in un barattolo in vetro precedentemente sterilizzato e asciugato perfettamente.

Copri il barattolo e lascia raffreddare a temperatura ambiente per 1-2 ore: il ghee solidificherà in una pasta cremosa, semi-trasparente, di colore giallo-dorato.

Conserva in frigorifero (dura fino a 6 mesi) o a temperatura ambiente in un luogo fresco e buio (dura fino a 3 mesi).
