In una pentola ampia, scaldare l'olio d'oliva a fuoco medio e aggiungere la cipolla tritata. Cuocere finché non diventa dorata, circa 10 minuti. Aggiungere la curcuma e mescolare per un paio di minuti.

Aggiungere i cubetti di petto di pollo e rosolarli fino a doratura, circa 6-8 minuti.

In un'altra pentola, scaldare un po' d'olio e aggiungere gli spinaci, il prezzemolo e il coriandolo. Cuocere finché non diventano scuri e appassiti, circa 5-7 minuti.

Unire il mix di verdure alla pentola con il pollo, versare il brodo vegetale fino a coprire gli ingredienti. Aggiustare di sale e pepe. Aggiungere il succo di limone.

Portare a ebollizione, poi ridurre il fuoco, coprire e far sobbollire per circa 60 minuti finché il pollo non è tenero.
