Spremere i pompelmi rosa a mano o con uno spremiagrumi, filtrare il succo in una ciotola per eliminare la polpa in eccesso.

Aggiungere l'acqua fredda, il succo di limone e il dolcificante al succo, mescolare bene fino a dissoluzione completa.

In una ciotola separata, sciogliere le proteine in polvere con 50ml del composto al pompelmo, mescolando con una frusta fino a eliminare i grumi.

Versare il composto proteico nel succo al pompelmo e mescolare energicamente per 30 secondi.

Versare tutto in un recipiente basso e ampio, coprire con pellicola e congelare per 60 minuti.

Tirare fuori dal freezer e grattugiare con una forchetta per rompere i cristalli di ghiaccio, mescolando dal basso verso l'alto. Ripetere ogni 20 minuti per altri 40 minuti (totale 2 cicli di freezing e grattugiatura).
