Method

Scaldare 1 cucchiaio d'olio EVO in padella antiaderente e rosolare a fuoco medio 250g di spalla di maiale tagliata a pezzi per 4-5 minuti.

Aggiungere 60g di cipolla e 2 spicchi d'aglio tritati, rosolare per 1 minuto.

Versare in padella 150g di tomatilli sgocciolati e tritati, 80g di peperoni verdi in scatola, 1 peperoncino jalapapeño affettato e 15g di coriandolo fresco, condire con ½ cucchiaino di origano secco, sale e pepe.

Aggiungere 200ml di acqua tiepida, coprire e cuocere a fuoco medio-basso per 12-15 minuti sino a cottura del maiale.

A fuoco spento, manteccare il composto con 30g di yogurt greco 0% in luogo della panna acida e cospargere 40g di formaggio Monterey Jack (o simile) grattugiato.

Guarnire con coriandolo fresco e servire in ciotola calda.
