Method

Versa i peperoncini secchi in una ciotola e coprili con acqua bollente. Lasciati in ammollo per 10 minuti, poi scola e tieni da parte.

In una padella antiaderente a fuoco medio-alto, tosta i semi di cumino e coriandolo per 2-3 minuti, mescolando continuamente, finché non sprigionano un aroma intenso. Trasferisci in un mortaio e schiaccia leggermente.

Pulisci la padella, aggiungi l'olio e scaldalo. Aggiungi i semi tostati e l'aglio tritato finemente. Togli dal fuoco dopo 1-2 minuti per non bruciare.

Metti i peperoncini scolati, i semi con il composto dell'aglio, il sale e il pepe in un frullatore. Versa il succo di limone fresco.

Frulla fino a ottenere una pasta densa e omogenea (circa 20-30 secondi). Se troppo densa, aggiungi 1 cucchiaino d'acqua.
