Tostare il peperone Hatch direttamente su fiamma media per 4-5 minuti girandolo con pinze fino a carbonizzarlo uniformemente, quindi metterlo in un sacchetto sigillato per 5 minuti per spellarlo facilmente. Peelare la pelle scura, rimuovere i semi e tritare finemente.

In padella antiaderente riscaldare l'olio EVO, rosolare i dadi di maiale a fuoco medio-alto per 3-4 minuti per una doratura iniziale, quindi rimuovere e mettere da parte.

Nella stessa padella cuocere la cipolla a dadini per 3 minuti, aggiungere aglio e cumino per 30 secondi, cospargere con la maizena e mescolare bene.

Reintrodurre la carne, aggiungere il peperone tritato, il brodo ridotto e i pomodori in lattina sgocciolati; portare a ebollizione.

Ridurre il fuoco al minimo, coprire e cuocere per 12-15 minuti fino a che la carne risulti tenera; regolare di sale e pepe nero.
