Preriscalda il forno a 160°C. In una ciotola, mescola la farina di riso con un pizzico di sale. Taglia la carne di manzo a cubetti e infarinala leggermente.

In una casseruola adatta per il forno, scalda l'olio d'oliva a fuoco medio. Rosola la carne in piccoli lotti fino a doratura, poi rimuovila e mettila da parte.

Nella stessa casseruola, aggiungi l'aglio e cuoci per un minuto. Versa il vino rosso, raschiando il fondo per recuperare i succhi.

Aggiungi il brodo di manzo, le foglie di alloro, il rosmarino e un pizzico di sale. Riporta la carne nella casseruola e porta a ebollizione.

Copri e trasferisci in forno. Cuoci per 1 ora e 30 minuti.

Nel frattempo, in una padella, cuoci la cipolla e la carota a fuoco medio per circa 10 minuti, finché non diventano tenere.

Aggiungi i funghi e cuoci per altri 5 minuti. Rimuovi la casseruola dal forno e unisci il mix di verdure.

Aggiungi il concentrato di pomodoro e il pepe. Rimetti in forno per altri 30 minuti.

Prima di servire, rimuovi le foglie di alloro e il rosmarino. Guarnisci con prezzemolo fresco tritato.
